TACO SOUP WEIGHT WATCHER STYLE.......... [Feb. 24th, 2010|10:55 am]

The Original Taco Soup
14.5 ounces canned diced tomatoes
14.5 ounces canned diced tomatoes with chilis((Rotel tomatoes))
14.5 ounces canned Mexican corn with chilis
2 cups cooked mixed beans(((I use a can of pinto beans and one can of green beans))
1 large onion, chopped
1 package taco seasoning mix
1 package ranch salad dressing mix (dry) (((not dip))))

I also add Boca “loose ground”((not burgers)) THE GROUND meat KIND.

Saute onion with fat free vegetable oil cooking spray generously. When softened, combine all other ingredients and cook until heated through.

Makes 7 cups. Serving size is 1 cup. 1 Point per serving.

I give my soup 3 points per serving (1 cup) since I added stuff.

Ok friends I just learned this so I’m passing it on (very helpful information here.)

How to get the meat out of a coconut easily.

Take a screw driver and hammer and poke holes in the indentions on top and drain all the milk out of the coconut.

Then put the (whole) coconut on a baking pan place in the oven at 350 degrees for 30 minutes.  

Take out and cover with a dish towel and whack it with the hammer several times.

Then pry the coconut meat out with a butter knife.

The shells get hard and crumbly and comes off easily this way….It also does not cook the inside of the coconut.

I learned this the other day when I noticed a co-worker eating a large chunk of coconut and questioned her how she got it out in such large pieces.

Tonight I’m going to try making

 

Slow Cooker Enchiladas

 

I got this recipe from Allrecipes.com    it was submitted by AIMS312

But the recipe really caught my eye.

 

INGREDIENTS:

 

1 Pound of lean ground beef

10 (6 inch) corn tortillas, quartered

1 (1 ounce) package taco seasoning mix

1 ¼ cups water

1 (12 ounce) jar chunky salsa

1 (10.75 ounces) can condensed cream of mushroom soup

1 (10.75) ounce) can condensed cream of chicken soup

4 cups shredded Mexican Cheese Blend

 

Directions:

  1. Crumble the ground beef into a skillet over medium-high heat. Cook and stir until evenly browned. Add taco seasoning and water: simmer for 15 minutes over low heat.
  2.  In a medium bowl , still together the salsa, cream of mushroom soup and cream of chicken soup. Mix in most of the cheese. Reserving ¾ cup for later.
  3. Place a layer of tortillas covering the bottom of a slow cooker. Scoop a layer of the ground beef over that, and then spoon a layer of the cheese mixture. Repeat the layers until you run out of stuff, ending with a layer of tortillas on the top. Top with the remaining cheese.
  4. Cover, and cook on High for 45 minutes to 1 hour.

 

I HAVE NEVER MADE THIS, BUT IT DOES SOUND GOOD.

SO I CAN’T GIVE ANYONE TIPS ON HOW THIS IS PREPARED.

I can't remember where I got this recipe....I may have read it off the what_a_crock  website or somewhere else.

anyway....you place boneless chicken in the crock pot,  pour a huge jar of spaghetti sauce on top...cook on low for 6 hours.   Then boil angel hair pasta and place chicken and sauce on top and cover with mozzarella cheese.

Its fabulous.....I had this last night.

Today I couldn't juice for breakfast.  Last night the juice hit and I missed most of Dancing with the Stars.....I think I've lost 5 lbs in one night....laugh   well at least it seemed that way!!!!

I will juice tonight for dinner and try to get back with it.   Just couldn't do it this morning.

I'm also going to try a new recipe tonight in my Crock Pot so when J gets in tomorrow night we will have dinner to come home to.   

Cabbage Rolls II

Its cabbage leaves stuffed with ground beef, onion, and rice, covered in a sweet and tangy tomato sauce and cooked in a slow cooker.


INGREDIENTS:
12 LEAVES CABBAGE
1 CUP COOKED WHITE RICE
1 EGG , BEATEN
1/4 CUP MILK
1/4 CUP MINCED ONION
1 POUND EXTRA LEAN GROUND BEEF---UNCOOKED
1 1/4 TEASPOON SALT
1 1/4 TEASPOON GROUND BLACK PEPPER
1 (8 OUNCE) CAN TOMATOE SAUCE
1 TABLESPOON BROWN SUGAR
1 TABLESPOON LEMON JUICE
1 TEASPOON WORCESTERSHIRE SAUCE

DIRECTIONS:
1.  BRING A LARGE POT OF WATER TO A BOIL.  BOIL CABBAGE LEAVES 2 MINUTES: DRAIN.
2.  IN LARGE BOWL, COMBINE 1 CUP COOKED RICE , EGG, MILK, ONION, GROUND BEEF, SALT, AND      PEPPER. PLACE ABOUT 1/4 CUP OF MEAT MIXTURE IN CENTER OF EACH CABBAGE LEAF, AND ROLL UP, TUCKING IN ENDS.  PLACE ROLLS IN SLOW COOKER.
3. IN A SMALL BOWL MIX TOGETHER TOMATO SAUCE, BROWN SUGAR, LEMON JUICE, AND WORCESTERSHIRE SAUCE.  POUR OVER CABBAGE ROLLS.
4. COVER AND COOK ON LOW 8 TO 9 HOURS.

 OK,,,,Here's how it turned out! Fantastic. I cooked in the slower cooker from 8 pm to 3 AM on low, do not brown hamburger meat, use tooth picks to hold them tight together.

I DOUBLE THE SAUCE TO PUT INTO THE CROCK POT BECAUSE IT JUST DIDN'T LOOK LIKE IT WAS ENOUGH, AND I DON'T THINK IT WOULD HAVE BEEN WITHOUT DOUBLING IT. (HERE'S THE SAUCE I DOUBLED) IN A SMALL BOWL MIX TOGETHER 1 CAN OF TOMATO SAUCE, 1 TABLESPOON OF BROWN SUGAR, 1 TABLESPOON LEMON JUICE, AND 1 TEASPOON WORCESTERSHIRE SAUCE.

Looks like I left off the Brown Sugar above I will go and fix that!!!

But this is something I will definitely make again and again.

I got up this morning and tasted the results and took 3 more bites than I should have it was so good.
I know when my husband tries it tonight he will love it!

Drinking juice gives you a great deal of energy.   But do not juice and then turn around and eat a meal.  You are defeating the purpose of your system absorbing all the vitamins. 

I'm drinking vegetable juice for breakfast and dinner and eating tuna for lunch.  Its hard but I have set myself a time limit of doing this until friday.  Friday I will go back to normal.  

I feel energized-Makes you feel good. 
Juicing is also expensive.   So I can't do this but 3 to 4 times a week.  

Today I juiced spinach, cucumber, apple, handful of purple grapes, carrots, kale, radish, and celery.....today it doesn't taste as good as yesterdays juice,  I think the kale and radish gives it a strong taste.

But I truly feel good.  

also I wouldn't suggest every buying an expensive juicer if you do not plan to use it at least 3 to 4 times a week.  You have to be committed to using it or its a total waste of money.  It takes time and clean up !!!!

but to me well worth the effort!

My hunny is going out of town all of next week so I plan to JUICE IT....
yeap... me and my new Jack LaLanne Juicer are going to have breakfast and dinner together.....hopefully I lose some weight.   While he's gone I don't have to plan dinner or anything so I can just come home and Juice.
and Watch all the channels I love too...smile........

This weekend went and had my taxes done, then I was off to Target to get my Jack Lalanne’s Power Juicer PRO.

I convinced my husband it could be my early birthday present……smile---he reminded me I wanted an extra cabinet in the kitchen for a pantry. 

Which I dearly still need but The Juicer WON.

 

I am very much happy I bought this thing.

I love it.   I was unsure if I would truly like it or think I made a big mistake but I truly love it.

It’s truly easy to clean; you just need one of those sponges on a wand like you clean dishes with.

This will clean the filter with ease.  

 

This juicer is for you, if you want to feel healthier on the inside.   This is the option for you.

It also fills you up before you have a meal.   Last night I wasn’t hungry for dinner because I had drunk a full two cups of juice.

And trust me I love to eat.   My husband looked at me strangely because he knows I love to eat.

I think my skin of my face feels smoother.

I also think I’ve lost a few pounds.

A girl at work said they strongly suggest cancer patients to buy this ----to help them go organic and become healthy. (I had never heard that before)

 

I juiced grapes, apples, carrots, cucumbers, tomatoes, spinach, lemon, celery.       

 

I had only bought like 4 apples or so but now I wished I would have bought a whole bag of apples and fruits but I wasn’t sure how things would go.

 

So anyway this is my review on my juicer……I will keep you all posted if I have any fantastic health changes in the future.

I have decided I want a Juicer....after weighing the pro's and cons ---I truly think this will be a healthy way for me to get more fruits and vegetables .   I can't wait to get started:  going to Target this weekend:
